Dallenwiller Geisskase Washed with Red Wine
Dallenwiller looks like your typical Swiss Alps cheese - pale, oily and with some holes. The secret to Dallenwiller is that, unlike most other Swiss cheeses, it is made with goat's milk, giving it a much more pronounced flavor than cow's milk cheese. It has grassy aromas with hints of nuts, and a mild flavor that is perfect for cooking and as a stand-alone cheese. Additionally, the rind is washed with red wine every day, imparting sweet fruity notes to it. Bring to room temperature for best enjoyment before serving and to release flavors and aromas. Pair with nuts, fruits and a mild floral red wine.
