The stew meat is selected from the Sirloin (though other cuts may be used), selected especially for its blend of flavor and great response to slow cooking, so whether you’re using a pot, Dutch oven or slow-cooker, they always result in tender, pull-apart meat.
Our Wagyu beef stew meat comes from cows of the same breed of Japanese Kobe. The privileged genetics of the breed renders the meat beautifully marbled with intramuscular fat. This fine webbing of fat melts as it cooks, making the meat buttery, incredibly flavorful and out-of-this-world juicy, no matter the cut or part of the steer it comes from.
We source our Wagyu from Broadleaf Game, one of Australia’s leading exporters of Kobe-style Wagyu. Their Wagyu is raised humanely in lush open fields of Australia for their first months, and then finished on grain for 300 days. Antibiotic and hormone-free, this is succulent, delicious all natural beef, high in Omega-3 and Omega-6 fatty acids.
