Easy Pasta with Truffle Foie Gras Recipe

A glorious pasta dish combining rich mascarpone, heavy cream and parmigiana reggiano with smooth foie gras and truffle. Add a touch of salt and a little more truffled foie gras, and you and your guests are in gourmet heaven. Enjoy!

Easy Pasta with Truffle Foie Gras Recipe Instructions

  • 1 lb box of your favorite pasta
  • 2 tablespoons salted butter
  • ½ pint heavy cream
  • 6 oz truffled micuit foie gras
  • 4 oz mascarpone cheese
  • 3 tablespoons grated parmigiana reggiano cheese
  • Fine sea salt to taste
  • 4 thin slices of truffled micuit foie gras for plating

  1. Boil the pasta in hot water until it’s al dente.
  2. Using a large saute pan, melt the butter on medium heat, and then add the heavy cream.
  3. Cut the 6 oz of micuit foie gras into small pieces, and add them to the heavy cream as it begins to boil. Whisk until the foie gras and cream are well-mixed.
  4. Once the mixture starts boiling again, whisk in the Mascarpone cheese.
  5. Again, wait until the mixture starts boiling again, and whisk in the Parmigiano Reggiano.
  6. As the mixture boils again, it will thicken. Now it’s time to add your chosen pasta and mix it into the sauce. Then remove the saute pan from the heat.
  7. Sprinkle 1 teaspoon of salt onto the pasta.
  8. Plate, and add a layer of the thin-sliced micuit foie gras on top.
