Tilston Point Blue
A very unique cheese from Hook's Cheese Company in Wisconsin. It seems these folks bat one out of the park every time they come up with a new blue cheese, and Tilston is no exception. Named as a homage to the British Stilton (Tilston, rearranged, spells Stilton), this is a washed rind blue cheese with a sticky, orangey rind and a very intense flavor and aroma. It's aged at least one year, making it on the older side, and therefore dryer and more intense. The texture is buttery and rich on the tongue, with a lot of granulation and wonderful crumbliness to it. The aroma is strong (stinky would be a better term), and the flavor earthy, sharp with nutty notes. A great cheese to incorporate to the cheese board, or to snack on. Also fabulous with meats. Pair with a Beaujolais.
