Caperberries are the ripened fruits of the caper bush. They are the size of grapes, and have a tender and crisp bite with a subtle crunch from the tiny seeds inside. Capers and ripe caper berries have a distinct caper flavor of tart lemon and salty mustard that is enhanced by pickling.
These caperberries are grown in Spain on the rocky hillsides of Andalucía, picked by hand with the stem attached, and packed in vinegar and water.
Treat them like olives or pickles, and use caperberries to garnish martinis, salads, and cheese plates. Like olives, they can be stuffed with a small amount of garlic, goat cheese, or red pepper and served as an appetizer. Try them in hummus or greek pastas alongside feta cheese and red onion. But be sure to rinse your caperberries to remove excess vinegar and salt before using them in a recipe.
