Fourme d'Ambert
This is probably the best "starter blue" out there. Fourme D'Ambert is superbly smooth, creamy and velvety, with a very, very mild flavor that appeals to everyone. The texture is the clincher, incredibly luscious and soft, enveloping the mouth with an almost chocolate feel. The taste though mild is also deep and luxurious, with a nice salty-sweet balance. Fourme D'Ambert comes from the lush Auvergne region of France, made of cow's milk. The finish is subtle, without being overly thick. This is the perfect dessert cheese; serve with drizzled honey and caramelized nuts. But you can also use it for salads (try mixing in sweet flavors like mandarins or cranberries) or by itself, with crusty bread. Bring to room temperature before serving. Pair with a sweet Vouvray or Sauternes.
