Pork Rillettes Pate
One of the most traditional pate recipes in French cooking, the classic rillettes is made using Old-World techniques by Olympia Provisions of Oregon. The flavorful pork meat is hand-chopped from the shoulder, then slow-cooked in succulent pork fat, flavored with spices and herbs like ginger, thyme, nutmeg and cinnamon (to name a few). The result is a smooth and creamy pork rillettes pate with a bold and piquant flavor that is perfect to enjoy with rustic bread and some hearty mustard (and some juicy cornichons perhaps).

A: The pate can be frozen, however the freezing and thawing out process can damage the texture so we'd advise against it.
