It is so rare to find a cheese made from Buffala milk that’s not Mozzarella, so we’re delighted to have found this unique bloomy rind cheese from the masterful cheesemaking brothers Alfio and Bruno Gritti of Quatro Portoni, who specialize in transforming buffalo milk into exquisite cheeses (including Blue di Bufala, another fantastic offering).
The velvety Casatica di Bufala has that extra creaminess from bufala milk (it has double the cream content than cow’s milk). It’s made in a Stracchino style, shaped like a square, and aged for about 4-5 weeks. The pate is buttery and silky but holds its shape, with a flavor that’s milky, a slight tang and a sweet finish - very similar to Brie, but richer.
Pair Casatica with a bubbly Prosecco or Champagne, grapes, sweet pears and a fresh baguette.
