A Genovese salami with a French name, Salami Francois by Red Table is one of our most delicate offerings. It’s not actually a French recipe, but rather named after Red Table’s mentor, Francois Vecchio. Made out of finely ground pork, this short and stout salami is blended with white pepper, garlic and white wine for a subtle aroma that lets the richness and sweetness of the pork shine.

Peel back the casing before eating Francois. It’s made out of natural beef casing, but it’s not edible. Serve with pat of fine butter on a baguette for a sumptuous snack, serve it as part of an antipasto platter, or pair with some cheeses and a beer for game night. This salami is shelf stable, but once you’ve cut into it, remove the entire casing, place in a plastic bag and store in the fridge.
