Rattlesnake Beans - Dry
Don't be scared by the name, Rattlesnake Beans are quite harmless and totally yummy. The name is for snake-like vines of this heirloom bean, the bean itself has a lovely dappled pattern on it's beige/brown skin. Grown for centuries by the Native American people of the American South West, Rattlesnake Beans are similar to the pinto bean, but with a more intense flavor, and they actually turn green when cooked. Replace in any recipe that calls for pinto beans. Soak overnight in fresh water before use. Drain and rinse.
