Echo Mountain Blue Cheese
Echo Mountain Blue is a mixed milk Oregon blue cheese that is extra aged - from 8 to 12 months. That's far more than most of your average blue cheese, and it shows in the flavor development. Rogue Creamery uses raw goat's and cow's milk, and they only send the wheels to market when they're just right. The result is a pale yellow cheese with blue veins throughout, with a nutty slightly tangy aroma, a mellow, creamy and buttery texture and a hint of pepper. Pair with a dessert wine.
