Lomo - Dry Cured Pork Loin

Lomo: Spanish for tenderloin, or as we like to call it, two pounds of the most delectable meat you will ever taste! This dry-cured pork lomo by Smoking Goose is one of the greatest creations to ever be put on a charcuterie board. Each cut is uniquely seasoned with paprika, black peppercorns, and fresh garlic paste to ensure that traditional Spanish flavor every lomo lover knows for sure.

Smoking Goose Lomo is the dry-cured pork loin that will tempt a finer palate looking for a savory, delicate cut of pork. Serve your lomo in paper-thin cut slices on your favorite charcuterie board so the meat is sure to shine in the light on the dinner table. This delicacy pairs well with our Dauro or Los Villares Spanish olive oils and Marcona almonds.

All Smoking Goose meats are guaranteed to come from a small, family-owned farm with no gestation pens or antibiotics used. They regularly site visit the farms to ensure quality control and ensure personal relationships with farmers. Smoking Goose also has a meat school within their facility to pass on their tricks and techniques to meat-lovers from around the globe.

Our lomo by Smoking Goose is shipped fresh overnight from their meat locker in Indianapolis where they take pride in every cut of meat sold. Be sure to wrap the loin in plastic wrap or foil and store in the refrigerator after use.

Very reminiscent of the best Italian prosciuttos with a bit less salty cure. The nice small layer of natural fat around it adds to the flavor. IF you trim it (God forbid!) use the trimmings in a sauté pan as a substitute for butter or olive oil. You will love it. Combines fantastically with a nice ripe melon.
