Waffles With Lemony Cream Cheese and Blueberries Recipe Instructions

Ingredients

  • 1 and 1/3 cups self raising flour
  • 1 teaspoon salt
  • 3 tablespoons white sugar
  • 1 egg
  • 1 and ¼ cups whole milk
  • 2 tablespoons Salted Butter, melted.
  • 1 teaspoon vanilla extract
  • 1 electric double waffle maker
  • 1 cup soft cream cheese
  • Zest of 1 lemon
  • ½ tablespoon lemon juice
  • 2 cups fresh or frozen blueberries + more for garnish.
  • Powdered sugar for garnish

Directions

  1. In a large bowl, mix together flour, salt, and sugar; set aside.
  2. Preheat waffle maker to desired temperature.
  3. In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.
  4. Fold in blueberries.
  5. Ladle the batter, 4 table spoons per waffle, into the preheated waffle maker. Cook the waffles until golden and crisp. Serve hot.
  6. Mix the cream cheese and lemon juice until fully incorporated.
  7. Spread over each waffle, scatter over the blueberries and lemon zest. Sift powdered sugar atop each.
