Pecuri In I Vigne - Wine Leaf Wrapped Goat Cheese
Pecuri in Vigne is Blakesville’s answer to Pecorino, reimagined in goat’s milk and wrapped in wine-soaked grape leaves. The leaves lend floral, herbal notes and keep the paste tender as it ages. The texture is firm but flexible, with bright tang and a hint of bitterness from the rind. It slices clean, looks beautiful, and tastes like summer in the hills. Add it to a board with roasted almonds and figs, or shave it over salads and grilled vegetables.
At Blakesville Creamery, tradition and creativity meet. They use old-world techniques, like hand-wrapping in grape leaves, and apply them to the bright, clean flavor of their own farmstead Alpine goat’s milk.
