Trillium

Inspired by Camembert and Brie, Trillium by Tulip Tree Creamery is full of sweet, buttery flavor with a little acid at the end of every bite. The best part? The cream! This is a triple cream cheese that’s very rich. The cheesemakers use full fat milk in the cheese and then load it with extra fat when they add the extra cream during the process. The result is smooth, buttery cheese that turns pudding-like with age.

Trillium is only aged 2-4 weeks, so the flavors take hold quickly, but it’s the creaminess that is center-stage. They source their milk from local a local Jersey cow farm that herds 40-50 cows. Jersey cows add even more creaminess to the cheese as their milk is extremely high in protein and butterfat.

Use Trillium as part of a versatile cheese or charcuterie board. Trillium itself is a versatile cheese that could be paired with any number of dishes sweet or savory. Like its inspiration Camembert and Brie, Trillium works well when spread over sliced baguette bread or water crackers. Pair this cheese with full-bodied red wines. Per Tulip Tree, Trillium can stand up to coffee notes in bolder stouts, so beer drinkers can pair it with their favorite porter or stout.

Tulip Tree Creamery is on the Northside of Indianapolis. There, they make all of their wonderful products by hand with care and devotion to the craft of cheesemaking. They truly love all things cheese as the staff takes time out of its busy schedule to teach cheesemaking classes at the creamery. You can see them at local farmer’s markets on the weekends promoting their amazing, award-winning products including the 2019 US Championship Cheese Contest winner, Trillium.
