O’Banon is Capriole Creamery’s rendition of a classic French chevre, only – in typical American fashion – bigger and some would say better. It’s a fresh goat cheese made from the milk of organic goats that graze in verdant Indiana hills. The texture is dense and smooth, with a mellow flavor. It’s wrapped in chestnut leaves that are soaked in Woodford Reserve Bourbon, infusing the cheese with a fragrant aroma and a bold flavor from the tannins in the leaves and the bourbon.
As it ages, O’Banon becomes drier and crumblier, with a more robust and intense flavor, so this is a cheese you can keep around for a while to discover its nuances. Branching out from all those Vermont and New Hampshire dairies and going into the heart of America we discovered Capriole, located in Indiana, amongst verdant rolling hills and the Ohio River. Judy Schad and husband Larry bought the property in the 70s, but later realized that the farm has belonged to Larry’s family generations back. They amassed a herd of friendly organic goats, and started developing what would later become award-winning goat cheeses. Truly one of the pioneers of American artisan cheese-making.
