Don't let the fancy name intimidate you, ganache is one of the simplest and easiest things to make, and super useful for many dessert and pastry recipes. Ganache is simply a mix of chocolate and cream, slowly melted until incorporated. Use it to fill tarts, pastries and desserts.

Chocolate Ganache Tutorial Recipe Instructions

Ingredients
  • ¾ cups chocolate, 70% cacao, chopped or in chips
  • ¾ cups heavy whipping cream

Directions
  1. Place the chocolate in a medium heatproof bowl.
  2. In a small pot, heat up the cream until it just breaks the boiling point. Remove from heat and pour over the chocolate, without stirring or mixing. Let it rest for about 2 minutes, then whisk until fully incorporated and smooth.
  3. Most preparations that call for ganache will require that you use while still warm.
  4. If using cold or storing for later use, first cool down the ganache: cover the bowl with plastic wrap, and poke a few holes at the top so that air can circulate. Let the preparation cool at room temperature.
  5. Once fully cooled, store in an airtight container for up to 5 days.
