A cross between a croissant and a sweet caramelized sticky bun, Kouign Amann offers a crunchy, salty-sweet exterior and a tender center that is positively addictive. Though rarely found outside the specialty bakeshop, it is decidedly one of France’s most delicious contributions to the world of viennoiserie, and now you can experience them in your very own home kitchen. An ideal addition to your breakfast table, don’t relegate this specialty item to the mornings. Just sweet enough, they make a fantastic dessert or an indulgent afternoon snack.

Hailing from the Breton region of France, Kouign Amann has remained a bit of a hidden gem for most of its history, only emerging into the world’s consciousness within the last decade or so. Thanks to a few cosmopolitan bakeries in the U.S. the delights of this specialty pastry have caught the attention of sweet lovers around the globe!

Pronounced (queen-ah-mahn), these tasty sweets mean “butter cake,” and no name could be more apropos. Made from laminated dough, they are comprised of a 50/50 ratio of butter and yeasted dough. When the dough is finished, it contains hundreds of minute layers of butter, created through a series of painstaking folds and turns. Where the croissant maker would stop at this step, those creating Kouign Amann are just getting started. After rolls, folds, and a copious amount of sugar, laced with Brittany’s other culinary claim to fame, Fleur de Sel, they are finally ready for the oven.

Place the Kouign-Amann in a buttered and sugared cupcake mold. Ensure the product is not hard/frozen before baking, which will allow heat to evenly transfer throughout. Bake 375˚F/190˚C for approximately 19 minutes (ovens vary). Remove immediately from the mold to avoid product from sticking.

Contains: egg, milk, wheat. Produced in a plant that also processes tree nuts.

A: The shelf life is around 3 months kept frozen, tightly packaged as to not be exposed.
