A very aromatic, very unique Spanish cheese, Queso de Cabra al Romero (literally, Goat Cheese with Rosemary), is a firm, buttery goat cheese that’s rubbed and coated with lard and a generous amount of rosemary. The herb infuses with cheese with a wonderful grassy aroma, which permeates into the smooth white paste, which in turn is brightly citrusy and tangy.
Cabra Romero cheese is produced in Murcia, a region famous for its Murcia breed of goats, and which also produces the beloved Drunken Goat cheese. The cheese is aged for about 2 months, a young wheel. The herb-crust makes for a striking presentation at the cheese board, and the lovely smooth flavor and texture matches nicely with other cheeses. Serve this rosemary goat cheese with a thick slice of the classic Membrillo quince paste, a loaf of rustic bread and a bottle of sweet red wine like Beaujolais.
