Quadrello di Bufala

Quadrello di Bufala by Quattro Portoni is the quintessence of Italian tradition with a lot of love and experience passed down. This cheese is one of the most original you’ll find in any catalog. Note the di Bufala in the title. This cheese is made from fresh water buffalo milk, and that means it’s full of fat content. In fact, water buffalo milk contains twice as much fat as cow’s milk. This gives the cheese a creamy yet elastic texture. Every bite is full of grassy and sweet flavor that’s naturally contained in the milk.

Quattro Portini uses the same recipe as Taleggio cheese, but exchange the milk type. It does have a firmer texture than you’d expect, but the taste is so much richer. This method honors the old traditions in the recipe, but gives it a modern twist by using the water buffalo milk. The rind will have some deep incisions because they dry the cheese on straw mats. As we said, this cheese is truly original and definitely a treat!

Feature Quadrello di Bufala as part of any cheese or charcuterie board. It compliments fruits and works well with water crackers. Pair it with fruitier wines like Malbec or Riesling. If you’re not feeling wine, pair it with a cider or farmhouse sour ale. It also works very well with bourbon if you’re so inclined.

Caseficio Quattro Portoni was originally in the cattle business in the Bergamo province of Italy for nearly 30 years. In the early 2000s, the family transformed the land and facilities into a water buffalo dairy and cheesemaking operation. They reverted to dairy practices and recipes born around the 7th century but decided not to just make the mozzarella prevalent in the region. Now, Quattro Portoni is known for a wide variety of water buffalo cheese ranging from ricotta to blue to the wonderful Quadrello di Bufala.

A: The rind is edible.

Q: How long does this stay fresh in refrigeration both before and after it is cut? Thanks.
A: The shelf life of the whole cheese is 60 days. Once cut into it should ideally be used within 2-3 weeks.
