Note the di Bufala in the title. This cheese is made from fresh water buffalo milk, and that means it’s full of fat content. In fact, water buffalo milk contains twice as much fat as cow’s milk. This gives the cheese a creamy yet elastic texture. Every bite is full of grassy and sweet flavor that’s naturally contained in the milk.
Quattro Portini uses the same recipe as Taleggio cheese, but exchange the milk type. It does have a firmer texture than you’d expect, but the taste is so much richer. This method honors the old traditions in the recipe, but gives it a modern twist by using the water buffalo milk. The rind will have some deep incisions because they dry the cheese on straw mats. As we said, this cheese is truly original and definitely a treat!

Caseficio Quattro Portoni was originally in the cattle business in the Bergamo province of Italy for nearly 30 years. In the early 2000s, the family transformed the land and facilities into a water buffalo dairy and cheesemaking operation. They reverted to dairy practices and recipes born around the 7th century but decided not to just make the mozzarella prevalent in the region. Now, Quattro Portoni is known for a wide variety of water buffalo cheese ranging from ricotta to blue to the wonderful Quadrello di Bufala.
