A bold Spanish goat cheese made in Castilla y Leon, Monte Enebro has a dense, cheesecake-like paste and a flavor that’s pungent and intense near the rind, becoming mellower and more lactic near the center, but still decidedly goaty.
Shaped like a flattened log, Monte Enebro cheese has a taste that’s very much like a blue cheese, thanks to the addition of penicillum roqueforti, the same mold that’s used for Roquefort. The mold is not added to the cheese itself, but rather to the rind, which is why Monte Enebro is not a blue cheese, but it definitely has some blue cheese profile.
The rich paste is bright white, a bit dry and brittle, with a traditional citric flavors and the classic tanginess of goat cheese, getting runnier, earthier and more complex as the cheese ages. This Spanish goat cheese is for those who like their chevres with lots of flavor and personality. Perfect to pair with a sweet Muscat wine.
