  1. In a bowl, mix the olive oil with all of the spices. Place the chicken in a plastic bag or plastic container and with your hands rub the marinade over the whole chicken. Pour any remaining marinade over the chicken. For best results, allow the chicken to sit in the marinade overnight.
  2. Preheat oven to 350F.
  3. Place the potatoes and carrots in the bottom of a roasting pan, then place the chicken on the rack in the roasting pan so that the chicken is not touching the bottom of the pan and the potatoes sit underneath the chicken. Bake for 1 hour, pour the wine over the chicken, and roast for 1 additional hour. Remove from the oven, rest and serve.
