Valrhona Noisette Noir Gianduja is a creamy blend of milk chocolate, hazelnut, and sugar. At 29% cacao and 32% hazelnut, it has a higher cacao and hazelnut content than many other giandujas, creating a smooth yet bold blend of nut and chocolate flavors.
Gianduja (pronounced zhahn-DOO-yuh) is a rich mix of chocolate and hazelnut paste. Gianduja was first developed in Italy in the early 1800’s when cacao was difficult to find. To stretch a dwindling supply of cacao liquor, one clever chocolatier added locally-grown hazelnuts to his chocolate recipe. The result was a smooth blend of earthy, bitter, and sweet flavors that was quickly welcomed. Gianduja works best in ganache, mousses, creamy frozen treats.
