Gruyere is one of those cheeses that you can buy confident of its origin and production, and that’s because it’s an AOP cheese – protected denomination of origin. Gruyere is a typical Alpine mountain cheese, and THE melting cheese par excellence, a firm, nutty cheese riddled with small holes, with pale yellow paste that’s smooth but dense. The cows graze on fresh mountain grasses, full of herbs and fragrant flowers, which infuse the milk with a wonderful flavor and terroir. The cheese is ripened at the dairy for a few weeks before the wheels are taken to Gourmino’s cellars for aging, for at least 12 months. The flavors develop and deepen with age, transforming the cheese and making it more complex and more flavorful.
