The second most popular cheese in Spain after Manchego, Mahon gets its name from a municipality in the island of Minorca. Minorca is an agriculturally-rich island famous for it's Unesco biosphere reserve protection, its gorgeous vistas, and Mahon.
As opposed to softer and younger versions, our 12-month Old Mahon Reserva is harder and drier, with a saltier taste. Its acidic flavor holds delicious hints of citrus and pineapple.
Made using using pasteurized cow’s milk, Mahon is sweet and nutty, sharp and buttery-tasting. It has a rich, golden paste and notable fiery orange rind that arises from the Pimenton rubbed on it during the aging process.
Our tasty Mahon Reserve may crumble when sliced and is fantastic if you serve it with any rich fruit jam and bread. You can also try a traditional way of eating Mahon - sprinkle with black pepper, tarragon and olive oil. Mahon cshines when you pair it with a full-bodied, fruity red like Madeira or Rioja. Or try a flavorful hoppy ale if you’re not a wine-person.
