Sottocenere al Tartufo Truffled Cheese

A truly spectacular creation, this Italian cheese is liberally studded in sophisticated Italian black truffles.

Sottocenere means “under ash”, a nod to the ash rind that encases the wheel while it ages, a traditional method from Veneto. This dense cow’s milk cheese is made from a mix of milks from the morning and evening milking, creating a rich yellowish pate, with a soft, pliable texture and a mild flavor that lets the truffles truly come through and shine.

Besides the truffle flakes that are found inside, Sottocenere al Tartufo is rubbed with truffle oil, further intensifying the truffle aroma and experience, plus a coating of spices like nutmeg, cloves, coriander, cinnamon, licorice, anise and fennel, for a sumptuous aromatic bouquet. It’s aged for about 4 months, smoked and sent to market, decorated with a leaf that marks it as an original Sottocenere.

A great option to elevate a cheese plate, you can also pair Sottocenere truffle cheese with foie gras, or shave it on a pizza, risotto, pasta or even a salad, for a luxurious take on even the simplest dish.
