Foxglove
You’re in for a gooey treat with this orange, washed-rind cheese. Foxglove by Tulip Tree Creamery is a double cream cheese that melts when you bite into it. There is a mix of cultures put into this cheese that includes yeast, plus the secret ingredient: nd Hubbard and Cravens’ Porter Beer made by Thr3ee Wise Men Brewery. The mix gives the cheese a complex flavor and fabulous aroma.
Tulip Tree sources all of their milk locally from a farm that herds about 40-50 Jersey cows. The Jersey cow milk definitely helps add a lot of creaminess and great texture to their line of cheeses as the milk contains extremely high amounts of protein and buttermilk. Aged between one to three months, Foxglove is chalky on the outside, yet runny on the inside. As it ages, it becomes almost scoopable. The aroma has a lot of grassy, earthy notes that come from that distinct mix of cultures.
Foxglove works well on its own as part of a cheese board. Try pairing it with heavy beers like a porter or a bock and any of our great charcuterie selections on our site. Located on the Northside of Indianapolis, Tulip Tree makes all of its products by hand, and, even as busy as they are, the small staff at the creamery takes time to teach classes at the creamery.
