Gum Tracaganth (also known as Gum Tragacanth) is a natural gum emulsifier ideal for preparing and enhancing fondants and sugar pastes. Derived from the sap of Middle Eastern legumes, it is entirely natural, made by draining sap from the root of the plant before it is dried into a fine powder. This light cream dust adds thickness, texture and elasticity to your fondant, thus making it easier to mold into desired shapes. It can also decrease drying time in your fondants.
