Gelpan Cold-50 - Cold Process Gelato Base

Use this convenient neutral base to make creamy gelato and frozen sorbet. Made by Gelatech, from Italy, GelPan Cold 50 is a cold process mix with a dairy base. It is a dry ingredient for gelato that's meant to be mixed with sugar, milk, and flavors in a batch freezer during cold process gelato preparation. Gelpan Cold-50 Gelato Base is a gel mix that has a milk/dairy base, making it ideal for use in rich and creamy gelato. Best results are produced when mix is allowed to mature for at least twenty minutes, though optimally between one and four hours.

Popular gelato flavors include crema, bacio, coffee, chocolate, stracciatella, pistachio, coconut, cinnamon, vanilla, almond, lemon, and many others.

During the cold process preparation, all ingredients for gelato can be mixed directly in the batch freezer. This is because everything is already microbiologically safe. Cold process cuts out the need to pasteurize ingredients in a separate machine prior to freezing, saving time, space, and money. Cold process preparation is a quick and efficient way to produce tasty gelato and sorbet.

Gelato and sorbet should be made fresh and served within one week of preparation for best flavor and texture.

Gelpan Cold-50 Gelato Base has an 18 month shelf life.

Ingredients: Dextrose, fully hydrogenated vegetable oils (coconut, palm), glucose syrup, stabilizers: locust bean gum, guar gum, carrageenan, carboxymethylcellulose, emulsifiers: acetic acid esters of mono- and diglycerides of fatty acids, lactic acid esters of mono- and diglycerides of fatty acids, propylene glycol esters of fatty acids, skimmed milk powder, soy flour, anti-caking agent: silicon dioxide.

Q: I want to make good gelato but have problem with being runny and not enough body. I use Lello Gelato Machine made by Musso that makes 1.5 quart of product. How much do I use and when do I corporate gelpan cold 50 to the mix. Ciao Grazie

These are the directions for the Gelpan Cold-50: 

50 g Gelpan Cold-50 270/280 g Sugar 1000 g Milk

Combine dry ingredients well. Add wet ingredients. Allow base to mature at least twenty minutes, but preferably 1-4 hours. Add the desired Gelatech flavorings. Process in a batch freezer.
