This 2.2 lb. brick of almond paste contains 50% almonds, blended sugar and stabilizers. With much less sugar than other types of almond paste (typically used for marzipan), you can use this 50% almond paste for any baking recipe, especially for filling pastries, chocolates, cookies and more.

A: Once the almond paste is frozen it would be best to slice the quantity you need and have that thawed out separately, while the rest of the frozen paste can be put back in the freezer. The paste can be thawed out in the refrigerator.
