Spicy Capocollo di Dorman
Don’t be intimidated by its name, Smoking Goose’s Spicy Capocollo di Dornan is actually a quite simple and mild salame made out of cured pork collar seasoned with paprika and white wine. This coarse sausage is Smoking Goose’s rendition of a traditional Italian capicola or Coppa, a Tuscan dry-cured sausage that’s in turn very similar to beef Bresaola.
This artisan Capocollo is made with pasture-raised heritage porks that Smoking Goose sources from family-owned local farms. The meat is seasoned and slow-cured in a natural casing. The rich flavor of the premium shines through, masterfully blended with the bright taste of white wine and the spicy zest of paprika.
Serve Capocollo is thin slices as part of a charcuterie platter, layered with Provolone for a fabulous sandwich, with Mortadella for a New Orleans-style Muffaletta, or even chopped and added to a salad.
Ingredients: Pork, spices (sea salt, cane sugar, garlic, paprika, crushed red pepper, black red pepper, coriander, juniper berries), white wine, vegetable powder (celery, juice, sea salt).
