Ultra TEX 8 Tapioca Starch

Ultra Tex 8 Tapioca Starch is a high performance emulsifier that demonstrates many of the same properties as a modified cook-up starch, imbuing sauces and creams with high viscosity, glossy sheen and an unbeatable melt-in-your-mouth quality.

Made from modified tapioca (a starch extracted from cassava root), this product can be applied to sauces, creams, pastry fillings and instant puddings as well as frozen or baked goods and neutral formulations, always adding smooth, creamy consistency and a clean flavor profile.

This product is created by Cuisine Tech, a premier source of modern cookery and molecular gastronomy ingredients in America. They provide a wide diversity of innovative emulsifiers, binders, gelifiers, gums, stabilizers, spherifiers, acids and pectins, all available for delivery from Gourmet Food World.

Q: Will this product cloudy up a sugar-free syrup, or will it thicken while staying clear?
A: The product should not cloudy up a syrup as it is also used for its ability to add a nice glossy sheen to sauces and creams.
