Icelandic Caviar

Iceland is the unexpected star of sushi dishes. Its cold waters are home to a wide variety of fish, and some of the most popular caviar and roe varieties that are used for sushi are found there. Herring roe, flying fish, Masago and Capelin roe all come from Iceland. These small fish eggs are used predominantly in Japanese and Asian cuisine, where they're known as sushi caviar, as they're used as a garnish for sushi and nigiri. Dyed in a rainbow of colors, Icelandic caviar is a must to have around in the kitchen.
