Icelandic Caviar

Iceland is the unexpected star of sushi dishes. Its cold waters are home to a wide variety of fish, and some of the most popular caviar and roe varieties that are used for sushi are found there. Herring roe, flying fish, Masago and Capelin roe all come from Iceland.
