Olympia Provisions

Under the strict supervision of "head salumist" - yes, that's his actual job title - Elias Cairo, Olympia Provisions, an artisan charcuterie maker out of Portland, Oregon, consistently delivers some of the best salumi in the market. Their handcrafted salamis and meats are made with antibiotic-free Pacific Northwest pork, natural casings and maintained in the organic white mold. There is something to be said about doing new things using old methods, especially if those are tried-and-test charcuterie techniques learnt first-hand in small European towns. That’s a skill that Elias Cario brought to the America when he opened Olympia Provisions (formerly Olympic Provisions). Cairo is a rare “salumist” who learned how to make charcuterie first with his father at home, then later in Europe with the masters of the trade. He returned to Oregon determined to bring the forgotten craft of making artisan salumi to an America used to factory-made deli meats, with a focus on using the wealth of premium meats and ingredients available in abundance in the Pacific Northwest.

Olympia is the first USDA-certified salumeria, and they will only use antibiotic-free, high-quality pork that they butcher to 100% lean, later adding pure, soft backfat. This method allows for more control of the ratio and proportions, guaranteeing a smooth, creamy salami full of porky flavor. Each piece of charcuterie that comes out of their kitchens is handmade; each salami, ham, and pate consistently delicious. The garlic they use is crushed fresh every day and the spices are ground daily. They don’t overdo it with the seal salt, because as much as their charcuterie is an art, it’s an art they have down to a science, paying attention to the little and big details. They take things slow, curing their meats naturally, without hurrying them up with artificial processes like irradiation and hot-cooking. The result? Meats and pates that are complex, deeply nuanced, richly flavored, and incredibly textured.
