Cabot Creamery

Cabot Creamery is a unique cooperative of 1,200 dairy farmers that operates in four facilities across New England and Upstate New York. In operation since 1919, their most well-known cheese is their famous Cabot Cheddar, made in the town of Cabot. Cabot Clothbound, one of their most coveted cheeses, is made from Vermont milk and was the first cheese to be aged at the Cellars at Jasper Hill. Today, it makes for about half the Cellars inventory, and it was this Cabot cheese marked the beginning of the Jasper Hills Cellars story. Cheddar, in a dizzying array of flavors and ages, is by far their specialty, but Cabot offers a variety of other incredible cheeses, like Colby Jack, Monterrey, Muenster, and other beloved classics.
